Spotlight: Thai Express

If you can believe it, Boxpark Croydon arrived in South London almost two years ago! Time sure flies when you're having fun. One of the original dons, who've been serving up quality Thai street food from day one, is Thai Express. We caught up with Uzma, Director of UK Ops, to get a look behind the scenes at one of Croydon's favourite menus.
Tell us who you are and what you do.
My name is Uzma Pattani and I am the UK Operations Director for Thai Express.
How did Thai Express come about?
Thai express began in Montreal Canada in 2000 as a family restaurant and soon grew to an international brand with over 300 stores worldwide.
What's your favourite dish on your menu?
My favourite dish is the Tofu Peanut Stir-fry, people seem to overlook it as its not your traditional Thai go- to dish, but trust me, our house satay sauce is like no other. Even after eight years of running the UK stores I am still not sick of it!
Which other Boxpark trader would you recommend to customers?
I am a huge fan of Kothu Kothu, I think the flavours are authentic, as well as a great price point and good size portions. It has a distinct flavour, especially the mutton dish.
What is your favourite thing about Croydon?
The diversity. There are so many young people from so many different backgrounds, and they all have a certain flare about them, a confidence that you don't see in North London, which is where I live.

Tina Turner's Simply the best.
