Spotlight: Fish Lab

Roll up, folks, it's time to get excited. There's a new catch of the day arriving at Boxpark Croydon, and we think you're really going to want to bob in and dive deep into this delectable menu, and even be a little...shellfish. Okay, that's enough terrible/amazing fish puns. We caught up with Andrea, one third of the boys behind Fish Lab, to get the lowdown on what you can expect.
Tell us who you are and what you do.
Myself, Alessandro and Lorenzo are just three Italian guys with a passion for great seafood. We were tired of the low standard of fish and seafood in London, and we wanted to create our own street food concept. At Fish Lab, we strive for culinary seafood excellence by paying close attention to the source and quality of our fish. We create experiences like no other by using in-season, local ingredients, including organic, sustainable vegetables and seafood. We are passionate about and committed to creating delicious and locally inspired choices for our customers.
What can your customers at Boxpark Croydon expect?
The freshness and flavour of ingredients is really going to shine through and give our new customers something unique. They will also get to experience the best fritto misto in the UK!

What is your favourite item on your menu?
The fritto misto, of course! It's fried calamari and prawns and it's amazing!
Which other Boxpark trader would you recommend to customers?
We love Coqfighter! They have a restaurant in Croydon and Shoreditch and their fried chicken is out of this world! If you haven't tried it yet then you absolutely must.
What is your favourite thing about Croydon?
Croydon is a great town. The transport links here are amazing. You can be in the city within minutes, and you can hop on a train all the way to the south coast.
Finally, what would your last meal on Earth be?
It would have to be a fresh made seafood spaghetti. Nothing beats it! Well, maybe our fritto misto, of course!
